A deliciously creamy quinoa porridge cooked with coconut milk, maple syrup, vanilla, banana pieces, and sultanas. Top it off with caramelized banana slices, dried coconut, walnuts, and sultanas or dried cranberries for the perfect texture.
Even though it’s summer, this breakfast treat will be sure to warm up your soul. It’s wholesome, nourishing, soothing, and simply a pleasure to eat. Served with a warm cup of mint tea, it’s the perfect comfort food. INGREDIENTS/ SERVES 2
1 cup (175 gr.) white quinoa, rinsed
2 cups (480 ml.) (coconut milk)
3 tablespoons maple syrup or honey
1/4 teaspoon vanilla extract or seeds of 1/3 a vanilla bean
1/2 teaspoon cinnamon
1 banana, chopped in small chunks
handful of sultanas, yellow raisins
banana slices, caramelized, for topping
your choice of nuts, seeds, dried fruit, for topping
METHOD
1. Combine quinoa, coconut milk, maple syrup, vanilla, and cinnamon in medium pot over medium-high heat. Whisk together to combine all the ingredients. Stir in the yellow raisins and banana pieces. Bring to a simmer, cover, and leave to cook for 15-20 minutes or until the quinoa has cooked through.
2. Serve and top with a drizzle of maple syrup (or honey), and your choice of dried fruit and nuts. Additionally, for the perfect addition of caramelized bananas, cook some banana slices for 2-3 minutes on each side in a pan over medium-high heat. Top them over the quinoa porridge and enjoy!
How lovely!!! I’d skip the maple syrup or honey for my tastes, and eat a whole big bowlful!!!
