These energy balls or energy “truffles” as I like to call them, are my go-to food whenever I need a lift or an energy boost. I usually make a large batch and store them in an air-tight container to enjoy throughout the week. Since they store well for 5-6 days, feel free to make them ahead of time.
The nuttiness of tahini partners perfectly with the rich and sweet flavors of the dates and chocolate making these truffles satisfying, wholesome, smooth, chocolatey, and simply delightful.

INGREDIENTS/ MAKES 12 ENERGY BALLS
10 soft Medjoul dates, pitted
2 tablespoons cacao powder plus more for coating
2 tablespoons coconut flour
1 tablespoon coconut oil
2 tablespoons tahini paste
1 tablespoon crunchy organic peanut butter or regular almond butter
small pinch salt
1. Blitz all of the ingredients in a food processor just until the mixture comes together.
2. Shape the mixture into 10-12 balls and lightly roll in cacao powder. Alternatively, dip the balls into melted dark chocolate and chill in the refrigerator to set. Other coating options include crushed nuts or grated coconut. Keep in an airtight container and store for up to 5-6 days.
