Raw Date and Peanut Butter Bars

These bars are decadent, chocolatey, naturally sweet, and simply scrumptious. Plus, they are guilt-free, require only 4 ingredients, and a few minutes to make. Need I say more? Actually, I should mention that they are so good that you will become addicted after the first bite, so if you lack self control, make sure that you have someone to share with.

INGREDIENTS/ MAKES 8-10 BARS

1/2 cup to 1 cup (120-240 gr.) crunchy peanut butter, depending on moisture
10 Medjool dates, pitted
2 tablespoons cacao powder
pinch of salt

METHOD

1. Blitz 1/2 cup peanut butter and the rest of the ingredients in a food processor for 2-3 minutes or until well combined. You may have to scrape down the sides at least once to get all of the ingredients thoroughly mixed. The combination should resemble a thick and dry paste. If it’s too dry, add more peanut butter until you get a consistency that comes together.

2. Spread the mixture onto a 8×5 in. (or slightly smaller) baking mold lined with parchment paper or plastic wrap. The smaller the mold, the thicker the bars. Press the mixture down using a spatula for a more even surface.

3. Slice into squares and eat right away or refrigerate and save for later. The bars keep well for a few days. Enjoy!

NOTES

* Double the ingredients and use the same size pan for thick brownies.
