My favorite season of the year is only a few days away. However, I must admit that I have welcomed it since mid summer. Autumn is such a refreshing reminder that everything gradually passes to make way for the new. We, like the seasons, are built to evolve in such a way. Eventually, the new will become old again and for that reason we must find ways to revive our spirits by seeing the world with new eyes; ways of redefining our surroundings. My recommendation will always be to live as travelers even when we are not traveling. And, of course, to open our arms towards the graceful nature of the fall season.
This delicious granola combination is reflective of the comforting flavors of autumn. Nourishing oats, warming cinnamon, crunchy almonds and pumpkin seeds, sweet dates and honey combine for the perfect breakfast to wake up to on a gloomy morning. Feel free to substitute the dates with your favorite dried fruit; i.e. dried cranberries, apricots, figs, etc. I love to snack on these bits throughout my week or served over a bowl of yogurt, fresh fruit, and honey.

INGREDIENTS/ MAKES ABOUT 4 SERVINGS
2 cups (200 gr.) organic rolled oats
1/2 cup (75 gr.) whole almonds, coarsely chopped
handful of pumpkin seeds
4 dates, pitted and coarsely chopped (0r dried fruit of choice)
1/4 cup dried desiccated or shredded coconut
1/3 cup coconut oil, melted
2 teaspoons cinnamon
1/3 cup honey or maple syrup
generous pinch salt
1. Preheat oven to 160 C (325 F) and line a large baking tray with parchment paper.
2. Combine the oats, almonds, pumpkin seeds, coconut, coconut oil, cinnamon, honey, salt, and dates in a large bowl and mix together.
3. Spread the granola mixture onto the baking tray and bake in the oven for about 30 minutes or until golden.
4. Leave to cool for at least 15 minutes before serving and store in an airtight container for up to a week.
